Quinoa and Spinach

My office had entered into a food sustainability challenge and asked me to post a link to this blog, so in the spirit of cutting down on meat consumption we had this dish for dinner. I can't seem to find the page in the cookbook, but I know I couldn't make this up myself so either that or its online. Next time less feta cheese. Quinoa is delicious and people keep telling me it has great health benefits.
Our office won the sustainability contest and I received the following note from the Corporate Citizenship Department:

I have shown off this book to a few blog followers, and am thinking that if we meet the goal of 250 recipes in 350 days then we may have a new challenge on our hands.
